Cauliflower Banh Mi Sandwich

I love delicious simple, easy, and quick to make sandwiches. This Banh Mi sandwich hits the spot. It takes about 30 minutes to make and is super tasty. The crisp cucumbers and pickled radish and carrots make this sandwich feel light and fresh.

Ingredients

  • 1 Large Cucumber (chopped in slices)

  • 2-3 Red Radish (thin sliced)

  • 1 Large Carrot (shredded or sliced)

  • 2 Submarine Sandwich Bread

  • 2 Cups Bite Sized Cauliflower Chunks

  • 1/2 Cup Rice Wine Vinegar

  • 1 TSP White Cane Sugar or Stevia

  • 4 TBSP Coconut Aminos ( or soy sauce)

  • 2 TBSP Sriracha

  • 1 TBSP Agave Syrup

  • 1/2 Cup Vegan Mayo ( I chose Veganise)

  • 1/2 Cup Cilantro

  • 1 Jalapeno (cut in slices) (optional)

  • Salt & Pepper to taste



Start with pickling the radish and carrots. Cut radish and carrots into thin slices. Grab a bowl and add rice wine vinegar, sugar or stevia, salt, and pepper to taste. Stir it up to mix ingredients and then add radish and carrots in. Let it soak, place the bowl in the fridge for now as you continue on with the recipe.

For the marinate, Grab another bowl and add Coconut aminos or soy sauce, 1 TBSP Sriracha, 1 TBSP agave, salt and pepper to taste. Rinse and chop cauliflower into small bite size pieces and add to the bowl of marinate. Mix and drench the cauliflower into the marinate so the flavors seep in. Now it’s time to cook, place cauliflower into a pan or skillet with light oil on medium heat. Cook until cauliflower softens.

For the sandwich spread, mix vegan mayo and 1 TBSP Sriracha in a bowl and stir. A simple way to make spicy mayo. Preheat oven to 350F and grab the sandwich bread and cut into halves. Place bread in the oven face down and let it toast for 3-5 minutes.

Now its time to assemble the Banh Mi! Spread the spicy mayo to both sides of the bread. Add cucumbers, radish, carrots, cilantro, and sliced jalapeno (optional) on one side, Add the cooked cauliflower on the other side. Stack the sandwich and you’re finished. A delicious fresh and easy sandwich to make. Perfect for lunch. Enjoy!
