Thai Beef Larb with Beyond Meat

A Thai classic! I love Thai food. My best friend in Elementary school was Thai. When I would go over her house, her family would feed me all this delicious Thai food. It has become one of my ultimate favorite foods. Thanks Wichada! I miss you! <3

Using Beyond Beef for this recipe. I don’t eat much Beyond Meat but I thought I’d give it a try. Let’s get started.

Ingredients

  • 2 Cups Ground Beyond Beef

  • 1 Cup Cut Corn (canned optional)

  • 3 TBSP White Rice (cooked)

  • 3 TBSP Chopped Green Onion

  • 3 TBSP Chopped Shiitake Mushroom

  • 1 TSP Sesame Oil

  • Handful Fresh Mint or Basil

  • 1-2 Red Diced Thai Chilli Peppers

  • 2-3 Cloves Garlic

  • 1 Handful Fresh Cilantro

  • 2 TBSP Grape Seed Oil

  • Iceberg Lettuce


    For Dressing

  • 2 TBSP Coconut Aminos or Soy Sauce

  • 1/3 Cup Fresh Lime Juice

  • 1 TBSP Brown Sugar

  • Salt & Pepper to Taste

  • Chilli Flakes (Optional)


Add Grape seed oil to a medium sized pan on medium heat. Chop and dice garlic cloves and add into the pan along with the corn. Cook for about 5 minutes or until corn starts to look golden brown. Now add shiitake mushrooms, Beyond Meat, Thai chili peppers, and green onion. Mix and break the Beyond Meat apart so it looks like ground beef. Add salt and pepper to taste. Cook on low for 7-10 minutes until meat is chewy.

Start making the dressing, add all the ingredients together and mix. Place to the side for now. Turn on the oven to 350F and place the cooked rice on a baking sheet laying it flat. Leave in the oven until it becomes crispy about 10-15 minutes. The crispy rice gives the larb a nice crunch.

Once the larb meat is fully cooked, add the dressing and sesame oil into the pan and mix, let it cook for about a couple of minutes so the flavors can marinate. Take the roasted baked rice out of the oven and start to crush the rice until you get a crumb like consistency. You can use the back side of a spoon to crush the rice. Once the rice is crushed, add it into the larb and mix. Turn off stove and sprinkle fresh mint and cilantro on top. Grab the iceberg lettuce and start pulling it apart creating iceberg bowls and fill the lettuce boats with larb. If you like you can squeeze extra lime on top. Bon Apetit!
