Watermelon "Ahi" Poke Bowl
Summer is almost over! I wanted to do one last summer dish… watermelon “ahi tuna” poke bowls. I’m telling you, your going to be so surprised when you taste this… it’s insane! Here’s what you need.
2 Tsp Tahini
2 Tsp Sea Salt
1 Tbs Sriracha
2 Tbs Rice Vinegar
3 Tbs Sesame Oil
6 Tbsp Soy Sauce of Coconut Amino Acid
1 inch of Fresh Ginger
1 Clove Garlic
Juice of Half a Lime
2 Scallion/ Green Onion
Medium to Large Size Watermelon (Seedles)
1 Cup Jasmine Rice (White or Brown)
1 Cup cut carrots
Half of an Avocado
Handful of Spinach or Spring Greens
Sesame Seeds (Or Everything Bagel Mix from Trader Joes)
Nori (Dried Roasted Seaweed)
Preheat oven to 350F. Grab your watermelon and start cutting and shaving off the skin. Blend all the marinade ingredients together in a blender. Cut into cubes. Place cubed water melon in a baking tray and pour half of the marinade onto the cubed pieces and mix. Place in the oven and let it baked for 45-50 minutes. You’ll know when it’s ready when the juice from the watermelon has liquefied to the bottom of your baking tray. Take the watermelon out and let it cool for 20 minutes.
Once cooled, place the water melon poke in a big bowl. Add the remaining marinade and mix. Place the poke into the fridge and let it cool additionally, or you can eat the poke warm, you choice. Now it’s time to start making your poke bowl. You can add or subtract ingredient listed from above. Once done, enjoy and you’ll be surprised how much it taste like ahi tuna. Your friends and family will definitely trip out. I suggest not telling them its plant based/vegan. Once they tell you how delicious it is, then you let them know and see the look on their faces.. lol.
