Mexican Sopes

Mexican Sopes

I love Mexican food. It’s in my top 5 favorite foods for sure. I decided to make sopes. Instead of meat I used walnuts. It may sound crazy, but it is very tasty. These were very fun to make and it didn’t take long at all. Don’t tell anyone they’re plant based and see if you blow their socks off.



Ingredients:

Walnut Meat

  • 3 Cloves Garlic

  • 3 Cups Raw Walnuts

  • 1 TBSP Paprika

  • 1 TBSP Cumin

  • 1/2 Cup Sun Dried Tomatoes

  • 1 TBSP Tomato Paste

  • 2 TBSP Liquid Aminos or Soy Sauce

  • 1 TBSP Brown Sugar

  • 1 TSP Nutritional Yeast

  • 1/2 Cup Grapeseed Oil

Beans

  • 3 Cups cooked pinto beans

  • 1 TSP Cumin

  • 1 Cup Veggie broth

  • 1-2 TSP Trader Joes Taco Seasoning Mix

  • 1-2 Bay Leaves

Green Salsa (Aji Verde)

  • 2 Medium Jalapenos

  • 1/2 Cup Veganaise Mayo

  • 2 Cups lightly Packed Cilantro

  • 2 Cloves Garlic

  • 1/2 Sea Salt

  • 1 Tablespoon Lime Juice

  • Pepper to taste

For Sopes

  • 3 Cups Masa Harina

  • 2 Cups Hot Water

Toppings

  • Chopped Lettuce

  • Chopped onions

  • Chopped Cilantro



To make the masa, add 3 cups of masa harina to a bowl. Add 1 cup of water and mix. The masa should stick together but not be sticky to the touch. If the masa sticks to your hands, add a little bit more masa. Once you have formed masa dough, take a spoonful into your hands and roll it into a ball. Press on the ball until it becomes round and flat. Once you’ve made enough sopes, drizzle a little oil on a pan and add the sopes to the pan on medium heat. Cook until yellow. When you take the sopes out from the pan, pinch the edges to form a border for sopes. Set aside.

Add walnuts to a food processor or blender. Don’t over blend, blend for 10 seconds and pause to check the consistency. When it looks chunky like ground beef, you know it’s ready. Place all the ingredients in the blender with the walnut meat and blend for 10-15 seconds. Add walnut meat to a pan with light oil and cook until you smell the aroma of the spices and when the walnut meat turns brown to resemble ground beef. Place in a bowl when it’s finished cooking and set aside.

For the beans, place refried beans to a pot and add vegetable stock. Add bay leaves, Trader Joes mix, and cumin. Stir on low-medium heat. Once vegetable stock soaks into the beans, you know its finished.

For salsa, add all the ingredients to your blender and mix. The salsa should be nice, green, and creamy, packing a little bit of heat from the jalapenos.

Now to makes the sopes. Add the beans first and spread to cover the bottom of the sope. Then add the walnut meat, I added about 1-2 spoonfuls for each sope. Then top with green cilantro salsa and toppings. Done!
