Coconut Watermelon Lime Smoothie Pops

On these hot summer days psychedelic music always hits the spot..

And I’ve been listening to a lot of Khruangbin lately (which is my favorite band right now.) I got inspired to make these smoothie popsicles because they’re name “Khruangbin” comes from the Thai word for airplane. And they ‘re also heavily influenced by the sounds of the Mexican guitar ( Which I loooove). Mexican Thai fusion + hot summer days… A recipe is born.

So here it is… Coconut Watermelon Lime Smoothie Pops.

Let’s get started.

Ingredients

  • 4 Cups fresh Chopped Watermelon

  • 2 Tsp Fresh Lime Juice

  • Hint of Agave Syrup

  • 1 Cup Coconut Milk (In a Can)

  • 10 Tsp of Tajin

Blitz fresh watermelon, lime juice, and coconut milk in blender. If you’re watermelon isn’t sweet enough, you can always add a little agave, your choice. Once all ingredients are blended up grab your popsicle maker. (I got mine on Amazon for about 20 bucks) Add a Teaspoon of Tajin in each of the popsicle molds, they should sink into the bottom of the mold. I have 10 popsicles molds so I added a teaspoon to each one, if you have more or less popsicle molds, and as much as you have in molds. Now, pour the watermelon smoothie blend into the molds. I found this part a bit tricky because it can get messy. Any mess you make just clean with a paper towel. Place lid and add popsicle sticks. Make some room in your freezer and let it sit for at least 8 hours (I kept mine in for a day to make sure they froze). Once your smoothie pops have solidified to the popsicle molds, thaw it out for a few minutes until popsicles come out easily from the mold. Now you can enjoy! If you like, you can sprinkle even more Tajin and lime juice on top. These popsicles are definitely a treat on these super hot summer days! Stay cool and enjoy!
