Happy Thanksgiving everyone!

Need a quick an easy idea for a Thanksgiving dish for all your vegan family members? Look no further, this recipe takes 30 minutes and it’s so tasty. Your non vegan family member would be impressed on how rich and creamy the alfredo sauce is. Psst! it’s made with cashews. Here’s how to make it!


Ingredients:

For Mac

  • 1-2 Package of Macaroni

  • 2 Cups Spinach

  • 2 Medium Portobella Mushrooms

  • 3-4 Cups Water


For Alfredo

  • 1 Cup Cashews

  • 2 Cups Water

  • 1 Lemon

  • 3 Cloves Garlic (peeled)

  • Himalayan Salt

  • Black Pepper

Add 2 cups of water and cashews in a pot on high heat. Let it boil for 30 minutes until cashews are soft. Once done, strain the cashews from the boiling water and add them to your blender. Add half of a squeezed lemon, 3 cloves garlic, 1/2 cup water, and Himalayan salt and black pepper to taste. Blitz in the blender and set aside.

For Mac, bring water to a pot and boil. Add macaroni and let it cook for 7-10 minutes until al dente. Rinse and cut portobello mushrooms in chunky square. Place mushrooms into a pan with light oil and cook for 3-5 minutes on medium heat. Once done, add macaroni to the pan and pour the cashew Alfredo sauce on top on low heat. Mix and evenly coat the macaroni. Then add spinach and continue to stir and cook for about 5-7 minutes until spinach is cooked.

This is a super easy and delicious recipe that I think vegan and non vegans would love. The cashew give such a rich creamy consistency and the spinach and mushroom are a nice balance of freshness.
