Acai Bowl

I love me some acai bowls!  I don't eat them as a snack, I substitute them for meals.  There's an art to making the perfect acai bowl.  First, I make sure I get enough fruits and veggies.  Then I add protein, healthy fats, and complex carbs to the mix.  That way I'm getting everything I need in my bowl of bliss.

Here's the ingredients:

  • 1 Frozen Acai packet
  • 2 bananas
  • 1/4 cup Frozen Mixed Berries
  • Handful of Strawberries
  • Handful of Blueberries
  • 1 Tsp Goji berries
  • 1 Tsp Hemp Seeds
  • 1 Tsp Cacao Nibs
  • 1/2 cup coconut milk

Combine frozen acai packet, frozen mixed berries, and 1 banana into the blender.  Pour the coconut milk into the mixture and blend all the ingredients together.  The consistency should be creamy, not runny.  Pour the acai mixture into a bowl. 

Cut the handful of strawberries and 1 banana into smaller pieces.  Start decorating the acai bowl by placing the strawberry and banana pieces how ever you want them.  Get creative! This is my favorite part of making these bowls of bliss!

You can come up with so many different designs in your bowl and you can add a variety of toppings.  Goji berries are high in vitamin c, promote healthy skin and fight cancer.  Cacao nibs boost energy, are high antioxidants, full of magnesium which helps with brain function, and overall just elevates your mood. Hemp seeds are high in protein, prevents cancer, and helps with hormone imbalance.
