Vegan Caramel Peach Donuts

Donuts. Who doesn't love donuts? I LOVE donuts. Here’s a recipe to satisfy your spring time sweet tooth. There’s fresh peach chunks in this recipe to add a little bang and freshness to each bite and caramel drizzle and chopped almonds sprinkled on top for a nice crunch.

Ingredients:

  • 1/4 Cup Coconut Milk

  • 1 Tsp Apple Cider Vinegar

  • 1/4 Tsp Pure Vanilla Extract

  • 1/3 Cup Maple Syrup

  • 3 1/2 Tbsp Coconut Oil

  • 2 Medium Fresh Ripe Peaches

  • 1 Cup Oat Flour

  • 1/4 Tsp Salt

  • Pinch of Cinnamon (Optional)

Turn the oven on to 350F.  Add the first 5 ingredients into a bowl and mix.  Skin and cut ripe peaches in cubes, and set aside in a bowl.  Combine wet ingredients with the flour and mix.  Once smooth and creamy, add the peach chunks little by little and stir with the batter.  Grab your donut pan and start scooping the batter, placing it in the donut trays.  Once done, put the donut tray in the oven and leave for 10-15 minutes.  When it’s  finished, let the  donuts cool for 5 minutes before taking them out of the tray.

Caramel Drizzle:

  • 3 tbsp. cacao butter, melted

  • 3 heaping tbsp. almond butter

  • 2-3 tbsps. maple syrup

  • 1 tbsp. coconut oil, melted

  • 1/8 tsp salt

Add cacao butter to a sauce pan and simmering heat. When the butter is melted, stir and add almond butter, maple syrup, and coconut oil.  Whisk until smooth and glossy. Drizzle on top of Peach donuts.
