Spicy Black Bean Quinoa Tacos

Tacooooos. Here’s a vegan plant based recipe for when you’re needing a Taco Tuesday in your life.

Ingredients:

Quinoa & Black Bean mix

  • 1 Onion Chopped

  • 2 Garlic minced

  • 4 Tbsp Tomato Paste

  • 1/2 Tsp Cayenne

  • 1/2 Tsp Cumin Powder

  • 1 Tsp Himalayan Salt

  • 2 Tbsp Nutritional Yeast

  • 1/4 Tsp pepper

  • 1/2 Cup Chopped White Mushrooms

  • 2 Cups Black Bean (precooked)

  • 2 Cups Veggie Stock

Toppings

  • 1 Avocado

  • 1 Tbsp EVOO (extra virgin olive oil)

  • 1-2 Tbsp Lime Juice

  • 1 Raddish

  • Iceberg Lettuce

  • Purple Cabbage

Chop onion and garlic. Add to a medium pot on medium heat with olive oil and cook for a couple minutes. Add veggie stock, tomato paste, cayenne, cumin, salt and pepper, and stir. Once the veggie stock comes to a boil, add the quinoa and cover pot. Cook for about 20 minutes or until the veggie broth is fully absorbed by the quinoa. Once done, remove from stove and add black beans to the quinoa.

Place Quinoa black bean mixture on a baking sheet and turn oven on to 350F. Sprinkle on nutritional yeast over the mixture and place in oven, bake until quinoa is slightly crispy. In a seperate bowl, mix avocado, olive oil, and lime juice together to make avocado mash. When the quinoa mix is crispy, take out of the oven and its time to make tacos. Serve with the lettuce and radish. Enjoy!
