Kale Baked Chips

I don't know about you, but… I love chips <333 Not all chips are created equal though and most of them are pretty unhealthy.  Can't I just enjoy a crunchy snack? Yes! I can and you can as well.  Here's a recipe for kale baked chips.

Ingredients:

  • 1 bunch of Organic Kale (You can choose curly or dino, I chose curly)
  • 1 Tsp Olive Oil
  • Pinch of Salt and Pepper

Preheat oven at 350 degrees.  Wash and dry kale. Start pulling off pieces of the kale leaf into little bite sized pieces. Place them onto a baking pan and lay them flat. Drizzle the olive oil on top of the kale, then add salt and pepper.  Put the baking pan into the oven and leave for 10-15 minutes. Kale should look crispy and green when done.

Benefits of Kale:

Kale is powerhouse of antioxidants and is an anti-inflammatory food.  The two compounds that give kale their green hue are zeaxanthin and lutein. Those two compounds help with eye health and prevent cataracts.  Kale contains sulfur and glucosinolates that help to detox the body.  So getting a good amount of kale in your diet acts as a detox.  Kale also fights cancer.  The same glucosinolates that detoxes the body also kills cancer cells. Amazing!

So the next time you're in the mood for a crunchy snack (I always am) try baking some kale chips.  It satisfies the craving and its noting but good for you. <3
