B B Q Jackfruit Pizza

I never would have imagined jackfruit being such a staple in my vegan diet.  My lola (grandma) would always give me jackfruit to eat as a child, very nostalgic for me.  Now it's back in my life in pizza form!  I looove making pizza.  I love the process, it's like art! I find it very therapeutic for me. 

Here's a vegan recipe that'll rock your socks off.

 

Ingredients:

For home made BBQ sauce:

  • 2 Tbsp Molasses
  • 2 Cups of Jackfruit
  • 2 Tbsp Olive Oil
  • 2 cups Tomato Sauce
  • 2 Garlic Cloves (minced)
  • 1 Tsp Onion Powder
  • 1 Tsp Sea Salt
  • 1/4 cup Apple Cider Vinegar
  • 1/4 cup Maple Syrup
  • 1/4 Tsp Cinnamon Powder
  • 1/2 Tsp Chilli Powder
  • 1/2 Tsp Garlic Powder
  • 1/4 Tsp Black Pepper
  • 1/4 Tsp Cumin Powder
  • 1/8 Tsp Cayenne Pepper

Add all the ingredients in a bowl and mix.  Add to a pot and saute the sauce for 2 minutes on medium heat or until you start smelling that amazing aroma.  Once done, let it cool.  Grab your jackfruit and start shredding it into thin pieces.  It's supposed to be imitating pulled pork so shred them accordingly.  Once done, add the jackfruit and BBQ sauce into a bowl and mix.  Put it in the fridge to cool.

 

 

Ingredients for cauliflower pizza crust:

You can opt for regular pizza crust, but I decided on cauliflower.  Here are the ingredients:

  • 1 small cauliflower head
  • 1 Egg
  • Italian seasoning
  • Salt & Pepper for Taste
  • Parmesan cheese (optional)

Add 2 cups of chopped cauliflower to food processor or blender.  Blend until it's crumbly. (If you blend too long it gets mushy, and we don't want that! )  Transfer to bowl, add egg and mix.  Then add salt, pepper, and Italian seasoning.  If you want, you can add some parmesan cheese to the mix (FYI: cheese is not vegan). Add ingredients to a 9 inch baking pan and smooth out.  Make the crust as even as possible and try not to have holes in your crust :) Put in the oven at 350F.  Leave in the oven for about 10 minutes, until edges look golden brown.  Take out of the oven and let it cool.

Garlic Cashew Cream Ingredients:

  • 2 Cups raw cashews
  • 3 Cloves of Garlic
  • 1 Tbsp Olive Oil
  • 1 Tbsp Lemon Juice
  • 1/2 Cup of Water
  • Salt & Pepper to taste

Soak cashews in hot water for 15-20 minutes.  Add to blender with the rest of the ingredients. Blend! Voila! A yummy super easy creamy garlic sauce.

Pizza Topping Ingredients:

  • Jackfruit
  • Red Onion (sliced)
  • Kale (chopped)

 

 

Get your cauliflower crust, start adding the BBQ jackfruit and red onion on top.  Add as much as you like.  Put in the oven for about 10 minutes until the onions are caramelized.  Take out of the oven, then start adding the kale.  Put back in the oven and cook for another 10 minutes. (Kale cooks really fast, which is why we wait to put the kale as the last topping)  

Now you enjoy!

You can add the creamy garlic sauce on top of the pizza or use it as a dipping sauce.  Sooo good.  Nom Nom Nom!
